Coconut Oatmeal Cookies
Ingredients
- 1 cup butter room temperature
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 1 1/2 cups all-purpose gluten free flour
- 1/2 cup coconut flour
- 1 1/2 teaspoons baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 2 cups old fashioned oats oatmeal
- 1 cup shredded unsweetened coconut flakes
Instructions
- Preheat oven to 350 degrees F.
- In a large mixing bowl, mix butter and sugars together until smooth.
- Add in eggs and vanilla extract and beat again to combine.
- In a separate bowl, combine flour, baking soda, salt and cinnamon. Add flour mixture to wet ingredients.
- Next add oatmeal and shredded coconut.
- In a large sheet pan lined with parchment paper, spoon out your cookies.
- Bake in a oven for 10-12 minutes or until edges are golden brown.
- Remove from oven and rest your cookies on baking sheet for another 5 minutes. Place on cookie rack. Eat and enjoy!
