The perfect breakfast does exist! My Easy Frittata Recipe is packed with unbelievable yummy flavours, gluten free and tastes amazing!
This is a fail proof recipe. You can customize your frittata to whatever ingredients you have in stock. I love using leftovers from my week. (Everything but the kitchen sink!) The best news you can make it all in only one pan. (Cast Iron work best!) This recipe also serves 4-6 people or meal prep for the week.

I love making this for breakfast at the cottage when I have a lot of people to feed. It takes only one pan to make and and even easier clean up. Everyone always requests this recipe and it is still to this day one of my favourite things to make for the weekend.
This is also a great recipe to meal prep for your week. Simply cut into 8th’s and store in containers in the fridge for 2-3 days.
Frittata tips:
- Spread your veggies evenly throughout the pan before pouring in the eggs and give it a little stir so that you can enjoy veggies in every bite.
- Use a cast-iron pan. Cast iron pans can safely go from the stovetop to an oven, and they conduct the heat well.
- Mix it up. Use as many vegetable and meat combinations as you want. I also recommend adding lots of cheese and fresh herbs.
How to Make a Frittata:
- Preheat oven to 400 degrees.
2. Heat olive oil to a cast iron pan. Add in bacon, cook until crispy. Remove and drain fat. Add in shallots, garlic & jalapeño. Cook until translucent.
3. Add in mushrooms and other veggies. Cook for approximately 5-6 mins. Season with salt, pepper, thyme red pepper chili flakes.
4. In a medium bowl, beat eggs and cream. Pour egg mixture over top. Add in tomatoes, bacon, cheese and give it a little stir.
5. Bake in oven for 15 minutes or until cooked through. Broil on low for 1-2 minutes at end for extra crisp. Serve with your favourite hot sauce and toast! Eat & enjoy this easy frittata recipe.

Easy Bacon & Veggie Frittata
Ingredients
- 1 tbsp olive oil
- 2-4 slices @whisperingmeadowsfamilyfarms maple bacon roughly chopped
- 1 shallot diced
- 2-3 cloves garlic minced
- 1 cup mushrooms diced
- 1 jalapeño diced
- 1 cup tomatoes diced
- 6-8 @whisperingmeadowsfamilyfarms organic eggs
- 1/3 cup cream
- 1/2 cup shredded mozzarella cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1 tsp red pepper flakes for heat
Instructions

We now make this regularly for our family on the weekends. The kids actually love it, and I love to use the leftovers like you suggested so no wasting food.
