Keep calm and carrot on. I just love roasting my veggies.  There is something about it that makes me feel all warm and fuzzy inside. These carrots are loved by both kids and adults alike. Here are some facts that you may not know about carrots.

1.)  They are one of the highest contributors of vitamin A, and have high antioxidants such as Beta Carotene.  This helps defend the body from free radical damage, thus preventing several cancers.

2.) They are also highly nutritious and cleansing due to their high fiber diet.

3.) I used to be a dental assistant some years ago and they are also great for maintaining your oral health! It helps prevent cavities and tooth decay.

4.) They have been know to also help control diabetes. This is due to the carotenoids that inversely affect insulin and thus lower blood sugar.

How to make Garlic Roasted Carrots:

1.) Grab a bunch of organic carrots. (about 8-10 medium)  slice downt the middle.

2.) Season with a 1 tbsp. olive oil, 1 tsp sea salt, 1 tsp of pepper, 1 clove of garlic and 2 sprigs of fresh thyme.

3.) Mix thoroughly. Put an oven at 375 degrees and bake for 35-40 minutes.

4.) Eat and enjoy!
