Each slice offers the perfect balance of sweet and tart apples, a hint of vanilla, and those nostalgic spices that make fall baking so special. It’s a wonderful treat to enjoy with your morning coffee, as an afternoon pick-me-up, or warmed up with a scoop of vanilla Greek yogurt or coconut ice cream for dessert.

Whether you’re hosting a cozy brunch or simply treating yourself, this apple strudel is a celebration of seasonal comfort — proof that wholesome can still be incredibly delicious.

Pro tip: Use crisp, slightly tart apples like Honeycrisp or Granny Smith for the best texture and flavour. And don’t forget to brush the pastry with a little maple syrup or coconut oil before baking to get that gorgeous golden glow!

Ingredient Breakdown

Let’s talk about the simple, wholesome ingredients that make this Healthy Apple Strudel so irresistible. Each one brings a layer of flavour, texture, and comfort that makes this treat feel like a warm hug from the inside out.

4 medium apples (Granny Smith or Honeycrisp), peeled, cored & thinly sliced
Apples are the heart of this recipe! I love using Granny Smith for their tartness — they hold up beautifully while baking and balance out the natural sweetness. Honeycrisp apples are another favourite for their juicy texture and floral sweetness. Feel free to mix both for the perfect blend of flavour and bite.

2 tbsp maple syrup or honey (for natural sweetness)
Instead of refined sugar, this recipe uses maple syrup or honey for a touch of natural sweetness. Maple syrup adds that warm, caramel-like depth that pairs so perfectly with apples and fall spices. If you prefer a slightly lighter flavour, go with honey.

1 tsp cinnamon
Cinnamon is the soul of any fall dessert. It brings warmth, coziness, and that signature aroma that instantly makes your kitchen smell like autumn.

¼ tsp nutmeg
A pinch of nutmeg adds just the right touch of spice and depth — it’s subtle, but it makes a world of difference. You can also sprinkle in a dash of ginger or allspice for a little extra fall flair.

½ tsp vanilla extract
Vanilla enhances all the other flavours and ties the filling together with a gentle sweetness. It’s a small touch that makes every bite taste rich and comforting.

6 sheets filo pastry, thawed
Filo pastry keeps this dessert beautifully light and flaky without the heaviness of traditional pastry dough. The delicate layers crisp up perfectly in the oven, giving that irresistible golden crunch with every slice. Make sure to keep the sheets covered with a damp towel while working — they dry out quickly!

4 tbsp unsalted butter, melted
Butter brings that lovely golden sheen and rich flavour to the strudel. Brush it lightly between the layers of filo to help them crisp up. If you’d like a dairy-free version, substitute with coconut oil for a hint of natural sweetness.

½ cup graham crackers, finely crushed (about 6–7 crackers)
This little secret ingredient adds a subtle crunch and a cozy, toasty flavour to the filling. The graham crumbs also help absorb some of the apple juices, keeping your strudel perfectly crisp. For a gluten-free option, simply use gluten-free graham crackers or finely ground oats.

Optional garnish:

  • A light dusting of powdered sugar for that bakery-style finish
  • Or a drizzle of warm maple syrup for extra indulgence
