Ingredients
  

  • Soup Base:
  • 3 tbsp olive oil
  • 1 800 mL can pumpkin purée (about 3 1/4 cups)
  • 1 large onion diced
  • 4 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 4 cups vegetable broth
  • 1/2 cup full-fat coconut milk
  • Garnish:
  • 2 tbsp pepitas green pumpkin seeds
  • 2 tbsp crispy fried sage fried in olive oil
  • Optional: a dollop of crème fraîche

Instructions
 

  • Sauté Aromatics: Heat the olive oil in a large pot over medium heat. Add the diced onion, garlic, and ginger. Sauté, stirring frequently, until the onion becomes translucent and fragrant, about 8–10 minutes.
  • Add Pumpkin & Spices: Whisk in the pumpkin purée, followed by the turmeric, cinnamon, nutmeg, cloves, salt, and pepper. Stir well to coat the mixture with spices.
  • Simmer the Soup: Pour in the vegetable broth, stirring to combine. Bring the soup to a boil, then reduce the heat and simmer for 15 minutes to allow the flavours to meld.
  • Blend Until Smooth: Use a hand blender directly in the pot or carefully transfer the soup to a blender. Blend until the soup reaches a creamy, smooth consistency.
  • Add Coconut Milk: Stir in the coconut milk, mixing well. Let the soup cook for another 5 minutes over low heat, allowing the flavours to harmonize.
  • Prepare Crispy Sage: In a small pan, heat a thin layer of olive oil over medium heat. Once the oil is hot, add the sage leaves and fry for 1 minute on each side until crispy. Remove and place on a paper towel to drain.
  • Serve: Ladle the soup into bowls and garnish with pepitas, crispy sage, and a dollop of crème fraîche if desired. Serve warm and enjoy this nourishing bowl of comfort!
