Let me show you how to pre-season your pan. You will need to wash with warm water and soap. Rinse clean and dry with a towel. Heat the pan to medium-low heat and spread some vegetable oil over the interior. Leave on for 1-2 minutes and then you are ready to cook.

The most comforting Sweet Potato Shepherd’s Pie The most comforting Sweet Potato Shepherd’s Pie you’ve ever had! 🍠

This savoury warm and hearty comfort food is exactly what I crave after a long day at work. The best news is that it is actually really easy to make. It’s also dairy free & gluten free!

This truly is a dish that you will make over and over again for your family! Most of the ingredients I bet you already have. But good news is that you can always make adjustments depending on what you have in your fridge. 

I like mixing it up with lean ground beef or turkey,(depending if I want a leaner pie) carrots, celery, onions, red peppers, mushrooms, and tomato paste or sauce. Seasoning include: garlic, chili powder, rosemary, and paprika. 

You can always make this dish ahead of time and store in your freezer. Having a pre-made meal ready for a quick and cozy evening at home.

I like making them in these little ramekins and cooked in the air fryer to get that crispy sweet potato topping!

Marry Me Chicken aka Creamy Sun-dried Tomato Parme Marry Me Chicken aka Creamy Sun-dried Tomato Parmesan Chicken Skillet. Because once you try this you will want to marry it!

This recipe is incredibly easy and super delicious. You can make it in under 30 minutes and your whole family will love it. 

It also makes great leftovers, so you can meal prep for your week. 

Ingredients:
1 tbsp extra virgin olive oil
3 boneless chicken breasts
1 tsp salt
1 tsp black pepper
3 garlic cloves, minced 
1 cup sliced cremini mushrooms
3/4 cup sun dried tomatoes, drained and chopped
1/2 cup chicken stock
1 cup cream (or milk alternative)
1/2 cup Parmesan cheese
1 tsp dried basil
1 tsp red pepper flakes (optional to add more spice)
1 cup fresh spinach

Directions:
1️⃣ Season chicken with salt and pepper. Heat olive oil in skillet and cook chicken for 5 mins on each side until golden brown. Does not need to be cooked through. Set aside chicken on a plate.

2️⃣ Add garlic in same skillet as well as mushrooms, chicken stock, sun dried tomatoes, cream, dried basil, red pepper flakes and spinach. 

3️⃣ Return chicken to skillet and bring sauce to a simmer. Reduce heat and cook for another 5-7 minutes until Chicken is cooked through. (165 degrees F internally).

4️⃣ Top with more Parmesan cheese, red pepper flakes and serve with pasta or potatoes. Eat and enjoy!
