Lemons are so versible, this secret to this recipe is the lemon-wine piccata sauce with capers

Ingredients
  

  • 2 chicken breasts sliced in half lengthwise
  • 1/2 cup gluten free flour to coat chicken
  • 2 tbsp olive oil
  • 1 lemon zested
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • For the lemon sauce:
  • 1/4 cup butter
  • 2 tbsp gluten-free flour
  • 1 cup chicken stock
  • 1 European lemon juiced
  • 1/2 cup white wine or chicken stock
  • 3 tbsps capers drained
  • Garnish: fresh parsley

Instructions
 

  • Add flour, lemon zest, salt, and pepper to a plate. Slice the chicken lengthwise and dredge the chicken in the mixture.
  • Heat olive oil in a pan and cook chicken for about 4-5 minutes per side. Set aside chicken on a plate.
  • In the same pan, melt butter and flour to create a roux. Slowly add in chicken stock and white wine. Whisking as you go for approx. 1-2 minutes.
  • Add lemon juice and capers. Simmer for another 3-5 minutes.
  • Add chicken to the pan and simmer for 2-3 minutes. Garnish with fresh parsley and serve over linguine or orzo pasta. Eat and Enjoy!
