Lemon Chicken Piccata
Lemons are so versible, this secret to this recipe is the lemon-wine piccata sauce with capers
Ingredients
- 2 chicken breasts sliced in half lengthwise
- 1/2 cup gluten free flour to coat chicken
- 2 tbsp olive oil
- 1 lemon zested
- 1/2 tsp salt
- 1/2 tsp black pepper
- For the lemon sauce:
- 1/4 cup butter
- 2 tbsp gluten-free flour
- 1 cup chicken stock
- 1 European lemon juiced
- 1/2 cup white wine or chicken stock
- 3 tbsps capers drained
- Garnish: fresh parsley
Instructions
- Add flour, lemon zest, salt, and pepper to a plate. Slice the chicken lengthwise and dredge the chicken in the mixture.
- Heat olive oil in a pan and cook chicken for about 4-5 minutes per side. Set aside chicken on a plate.
- In the same pan, melt butter and flour to create a roux. Slowly add in chicken stock and white wine. Whisking as you go for approx. 1-2 minutes.
- Add lemon juice and capers. Simmer for another 3-5 minutes.
- Add chicken to the pan and simmer for 2-3 minutes. Garnish with fresh parsley and serve over linguine or orzo pasta. Eat and Enjoy!
