Ingredients
  

  • 6-7 Roma tomatoes ripe
  • 3 cloves garlic
  • 1 tbsp extra virgin olive oil good quality
  • 1 tsp balsamic vinegar
  • 6-8 basil leaves fresh
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 large French baguette

Garnish

  • 2 tbsp parmesan cheese shredded
  • 1 tbsp fresh basil finely chopped

Instructions
 

  • Preheat the oven to 450°F.
  • Blanch and peel the tomatoes: In a medium pot of boiling water, blanch the tomatoes for about one minute, then remove them from the heat. To peel easily, score the bottom of each tomato with an "X" before boiling. After blanching, the skin should slip off easily. Finely chop the peeled tomatoes and remove the seeds.
  • Prepare the crostini: Arrange the bread slices on a baking sheet. Brush each slice generously with olive oil. Bake for 6-7 minutes or until they’re lightly golden and crispy.
  • Make the bruschetta topping: In a medium bowl, combine the chopped tomatoes, minced garlic, fresh basil, olive oil, balsamic vinegar, salt, and pepper. Stir to mix all the flavours together.
  • Assemble the bruschetta: Spoon the tomato mixture onto the warm crostini. Garnish with freshly shredded Parmesan cheese and extra fresh basil leaves.
